Zabucaiman Recipe

We have unique names for things in T&T. We call avocados, zabocas. Other places call them alligator pears, probably because their skin is green and rough. Instead of alligators in Trinidad & Tobago, we have their close cousin, the caiman. Voila… Zabucaiman!

Make a tasty Zabucaiman dip by following the recipe below or click this link to follow along with our camp video.


  • 1 heaping tablespoon of Dairy Dairy Full Cream Milk
  • 1 avocado
  • 1 carrot
  • 1 cucumber
  • olives or grapes
  • salt and black pepper to taste


Scoop out the flesh of the avocado and mash it up. Add the Dairy Dairy, salt and black pepper and mix well. Scoop mixture back into avocado shell place on plate. Cut carrots into triangles for the caiman’s teeth and place around the edge. Slice the cucumber thinly. Use 2 slice for the eyes, garnish with cut grapes or olives to create pupils. Layer the remainder of the cucumber slices behind the avocado to create the caiman’s body. Add carrot sticks for legs. Serve.

You can enjoy by using cucumber slices to scoop your dip or you can use crackers!
